  • 1 1/2 tbsp Italian seasoning

  • 1 1/2 tbsp tomato paste
  • 1/2 cup whole wheat breadcrumbs (can use regular breadcrumbs), up to 3/4 cup as needed

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even cooking.
  2. Prepare Mixture: In a food processor or high-speed blender, combine the cooked lentils, flax egg or regular egg, diced onion, minced garlic, nutritional yeast, Italian seasoning, sea salt, black pepper, and tomato paste. Pulse the ingredients until well combined but still retaining some texture, avoiding pureeing into a smooth paste.
  3. Add Breadcrumbs: Add 1/2 cup of whole wheat breadcrumbs to the mixture and pulse again. If the mixture feels too wet to form balls, incrementally add up to 3/4 cup of breadcrumbs until the mixture holds together well.
  4. Shape Meatballs: Using a tablespoon cookie scoop or your hands, scoop out the mixture into 1-tablespoon portions and roll them into balls. Arrange the meatballs evenly spaced on the prepared baking sheet.
