These Easy Rainbow Popsicles are a fun and colorful treat made with creamy cheesecake pudding mix layered in vibrant rainbow hues. Perfect for a refreshing and visually appealing dessert, these popsicles are simple to prepare and freeze overnight for a delightful, cool snack.
Ingredients
Pudding Mixture
- 2 boxes cheesecake pudding mix (3.4 ounces each)
- 4 cups milk
Coloring
- Gel food coloring: red, orange, yellow, green, blue, and purple (2 drops each color)
Tools
- Frosting piping bags or plastic sandwich bags
- 8 popsicle molds
- Popsicle sticks
Instructions
- Prepare Pudding Mixture: Whisk together the cheesecake pudding mix and milk in a large bowl for about 2 minutes until smooth and well combined.
- Divide Pudding: Evenly divide the prepared pudding mixture between 6 small mixing bowls to prepare for coloring.
- Add Colors: Add 2 drops of a different gel food coloring to each bowl (red, orange, yellow, green, blue, and purple) and stir thoroughly to evenly distribute the color in each pudding mixture.
- Fill Piping Bags: Pour each colored pudding into separate frosting piping bags or substitute with plastic sandwich bags, snipping off the tips to create a small opening for easy layering.
- Layer Popsicles: Starting with the red pudding, pipe about 4-5 teaspoons of pudding into each of the 8 popsicle molds. Continue layering with orange, yellow, green, blue, and purple pudding colors, layering each color neatly to maintain the rainbow pattern. You may have a little pudding left over from each color.
- Insert Sticks and Freeze: Insert popsicle sticks into each mold and freeze the popsicles overnight to set completely before serving.
Notes
- If frosting piping bags are not available, plastic sandwich bags can be used by filling them with pudding and snipping off the corners for a makeshift piping bag.
- Use gel food coloring for vibrant colors without altering the pudding consistency.
- Make sure to freeze the popsicles overnight or for at least 6-8 hours for best results.
