Ingredients
For the protein pizza dough
- 1 cup gluten-free all-purpose flour (or regular all-purpose flour)
- 1.5 teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- 1 cup plain Greek yogurt
For the topping
- ⅔ cup pizza sauce (or more if needed)
- ¾ cup shredded mozzarella cheese
Instructions
- Preheat Oven: Preheat the oven to 400 degrees F and place a rack in the center position. Grease a pizza pan or baking sheet with olive oil spray or non-stick cooking spray and set it aside.
- Make Self-Rising Flour Mixture: In a medium mixing bowl, combine gluten-free flour, baking powder, kosher salt, garlic powder, and Italian seasoning to create the self-rising flour mixture.
- Form Dough: Add the plain Greek yogurt to the dry mixture. Using a fork or rubber spatula, begin mixing, then use your hands to knead the mixture for 2-3 minutes until a smooth dough ball forms. Sprinkle additional flour on your hands and dough if sticky.
- Shape the Dough: Press the dough with your hands onto the greased pizza pan, spreading it evenly from the center to the edges to form a pizza shape.
- Pre-Bake Crust: Bake the shaped dough in the preheated oven for 5 minutes until slightly set but not browned.
- Add Toppings: Remove the crust from the oven and evenly spread pizza sauce, leaving a ¾ inch border. Sprinkle shredded mozzarella cheese evenly over the sauce.
- Bake Pizza: Return the pizza to the oven and bake for an additional 15-17 minutes until the crust turns golden and the cheese melts and bubbles.
- Cool and Serve: Let the pizza cool for 5 minutes before slicing and serving.
Notes
- Use a sprinkle of flour and keep your hands well-floured when kneading the dough to prevent sticking.
- You may roll out the dough with a rolling pin on parchment paper for easier transfer, but pressing it with your hands directly on the pan works best.
- For a crispier crust, brush or spray the dough with olive oil before baking.
- Store leftover pizza slices layered with parchment paper in an airtight container in the fridge for up to 4 days.
- Reheat leftovers in the oven at 375°F until cheese melts and pizza is warmed through, or use an air fryer at 350°F for 2-3 minutes for individual slices.
