Description

This Easy Meatball Pot Roast is a comforting slow cooker meal that combines tender frozen meatballs with savory vegetables and rich brown gravy, topped with buttery seasoning. Perfect for a hands-off dinner, it pairs beautifully with creamy mashed potatoes or your favorite sides.

Ingredients

Main Ingredients

  • 1 (26 oz) bag frozen meatballs
  • 2 cups baby carrots
  • 5 stalks celery, chopped
  • 2 packets brown gravy mix
  • 1 packet Lipton onion soup mix
  • 2 cups water
  • ¼ cup butter
  • 1 (24 oz) container refrigerated mashed potatoes (or homemade mashed potatoes)

Instructions

  1. Prepare the Slow Cooker: Place the frozen meatballs, baby carrots, and chopped celery into the slow cooker evenly.
  2. Mix the Gravy: In a small bowl or large measuring cup, whisk together two packets of brown gravy mix with two cups of cold water until smooth.
  3. Combine Ingredients: Pour the gravy mixture over the meatballs and vegetables in the slow cooker, then toss gently to coat everything evenly.
  4. Add Seasoning: Sprinkle the packet of Lipton onion soup mix over the top of the meatballs and vegetables for added flavor.
  5. Add Butter: Slice the butter into small pieces and distribute them evenly over the mixture in the slow cooker.
  6. Cook: Cover and cook on LOW for 3 to 4 hours. Stir halfway through cooking to mix the butter and seasonings well and ensure even cooking.
  7. Prepare Mashed Potatoes: Just before serving, heat and prepare the mashed potatoes according to the package instructions or your preferred method if homemade.
  8. Serve: Serve the meatballs and vegetables over the prepared mashed potatoes. Enjoy your hearty and delicious meal!

Notes

  • The 26-ounce bag of homestyle frozen meatballs used includes about 55 small meatballs, but exact amounts can vary.
  • For variation, substitute the mashed potatoes with baby potatoes or chopped potatoes, which take roughly the same time to cook as the carrots.
  • Add optional vegetables such as onions and mushrooms, or season with garlic and black pepper for extra flavor.
  • Try serving this dish over a baked potato or alongside cooked rice for a different twist.
  • Although it’s a complete meal, crispy garlic bread or dinner rolls pair nicely with this pot roast.
