Description

Disney World’s Ooey Gooey Toffee Cake is a luscious dessert featuring a buttery yellow cake base topped with a creamy, sweet cream cheese layer mixed with chocolate chips and crunchy toffee bits. Baked to perfection, this cake boasts a golden brown exterior with a delightfully gooey center, perfect for serving warm with a scoop of vanilla ice cream for an indulgent treat.

Ingredients

Bottom Layer

  • 1 (15.25 ounce) yellow cake mix
  • 1 large egg
  • ½ cup butter, softened

Second Layer

  • 8 ounces cream cheese, softened
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • ¼ cup butter, softened
  • 3½ cups powdered sugar
  • 1 cup mini chocolate chips
  • 1 cup chocolate covered toffee bits (Heath Bits)

Instructions

  1. Prepare Pan: Preheat your oven to 350°F (175°C). Generously grease and flour a 9 x 13 inch baking pan or cupcake/muffin tins to prevent sticking.
  2. Make the Bottom Layer: In a mixing bowl, combine the yellow cake mix, 1 egg, and ½ cup softened butter. Blend well until fully combined. Gently press this mixture evenly into the bottom of the prepared pan.
  3. Prepare the Second Layer: In a separate bowl, beat the softened cream cheese until smooth. Add 2 eggs, 1 tablespoon vanilla extract, and ¼ cup softened butter; mix thoroughly. Gradually add 3½ cups powdered sugar, beating until well blended and creamy.
  4. Add Mix-ins: Fold in 1 cup mini chocolate chips and 1 cup chocolate covered toffee bits gently into the cream cheese mixture to distribute evenly.
  5. Assemble and Bake: Spread the cream cheese mixture evenly over the cake mix bottom layer in the pan. Bake in the preheated oven for about 40 minutes. The cake should turn golden brown on top, with the center remaining slightly gooey.
  6. If Using Cupcake Tins: Roll the cake mix into about 24 small balls and gently press each into the greased and floured cupcake tins (avoid using liners as they stick). Add a generous spoonful of the cream cheese mixture on top of each ball. Bake for 25 to 30 minutes.
  7. Cool and Serve: Allow the cake to cool slightly, then loosen the edges with a small knife before removing to prevent breaking. Serve warm topped with a scoop of vanilla ice cream and your favorite ice cream toppings for extra indulgence.

Notes

  • Ensure the butter and cream cheese are softened for easier mixing and a smoother texture.
  • Do not use cupcake liners in cupcake tins, as the cake tends to stick; grease and flour the tins instead.
  • Baking times differ depending on pan size: 40 minutes for a 9 x 13 pan and 25-30 minutes for cupcake tins.
  • The center of the cake should be slightly gooey for the best ooey-gooey texture; avoid overbaking.
  • Adding a scoop of vanilla ice cream on top enhances the dessert experience.
