- 4 small ice cubes or 2 large ice cubes
- 2 (15.5-oz) cans chickpeas, drained, rinsed, and patted dry
Instructions
- Blend the tahini mix: Add chopped dill pickles, chilled pickle juice, tahini, extra virgin olive oil, garlic cloves, sea salt, fresh dill, ground black pepper, and ground cumin to a food processor. Process the mixture until smooth and well combined.
- Finish the hummus: Add the drained and rinsed chickpeas along with the ice cubes to the food processor. Puree for 5 to 7 minutes, stopping occasionally to scrape down the sides to ensure an ultra creamy and smooth texture. The extended blending time is crucial for achieving the perfect consistency.
- Adjust as needed: If the hummus seems too thick or the food processor gets stuck, add an extra tablespoon or two of water to help it blend smoothly. Taste the hummus and adjust seasoning if necessary, adding more salt, dill, or pickle juice as preferred.
- Serve: Transfer the dill pickle hummus to a bowl. Garnish with additional sliced pickles, fresh dill sprigs, crushed red pepper flakes, or freshly ground black pepper. Enjoy as a sandwich spread, in wraps, or as a snack or appetizer.
- Store: Keep leftover hummus in an airtight container in the refrigerator for 5 to 7 days. For longer storage, freeze in silicone trays in 1 to 2 cup portions for up to 12 weeks. Thaw before serving.

- Substitution for tahini: It is recommended to use tahini for traditional flavor, but sunflower seed butter or almond butter can be alternatives if allergic or unavailable. Avoid peanut butter as it alters the taste.
- Substitution for olive oil: Avocado oil or sunflower oil can be used if olive oil is not available. Oil-free versions might try avocado with a little water, but texture and flavor may differ.
