Instructions
- Prepare the eggs: Slice the hard-boiled eggs in half and carefully remove the yolks. Place the yolks in a bowl for mashing. Chop the egg whites into small bite-sized pieces and set them aside for folding in later.
- Mash and mix the yolk base: Using a fork, mash the yolks until crumbly. Add the mayonnaise, Dijon mustard, yellow mustard, sweet relish, apple cider vinegar, garlic powder, onion powder, smoked paprika, and freshly chopped chives. Stir the mixture thoroughly until it reaches a smooth and creamy consistency.
- Combine whites and yolk mixture: Gently fold the chopped egg whites into the creamy yolk mixture, ensuring the whites are evenly distributed without breaking them down.
- Season and chill: Taste the dip and adjust seasonings with salt and black pepper as desired. Cover and chill the dip in the refrigerator for at least 30 minutes to allow the flavors to meld and the dip to firm up slightly.
- Garnish and serve: Before serving, garnish with extra chopped fresh chives and a light sprinkle of smoked paprika for flavor and visual appeal. Serve chilled with crackers, chips, or fresh vegetables.
