  • 1 English cucumber
  • 8 slices white bread
  • 2-3 ounces chive and onion cream cheese, softened
  • Fresh dill, optional
  • Flake sea salt & pepper, to taste


Instructions

  1. Prepare cucumbers: On a cutting board, slice 1 English cucumber as thinly as possible, ideally using a mandoline slicer for uniform thickness.
  2. Rest: Place cucumber slices on a paper towel, sprinkle with salt and pepper, and allow them to rest for 5 minutes to draw out excess moisture. If preparing ahead, let them sit up to 30 minutes.
  3. Spread: Evenly spread 2-3 ounces of softened chive and onion cream cheese over 4 slices of white bread.
  4. Layer: Arrange the cucumber slices on top of the cream cheese-covered bread, slightly overlapping. Add additional flake sea salt and pepper if desired, and sprinkle fresh dill on top if using. Then place the remaining 4 slices of bread on top to form sandwiches.
  5. Slice: Trim off the crusts from all four sides of the sandwiches. Cut each sandwich into 4 squares or triangles as preferred.

Notes

  • Variations: Mix in a tablespoon of mayo or Greek yogurt into the cream cheese for a creamier texture.
  • Add 1 teaspoon fresh dill and a dash of garlic powder to boost flavor.
  • If using plain cream cheese, enhance it with 1 tablespoon mayo, 1 teaspoon fresh dill, 1 teaspoon chives, 1/8 teaspoon garlic powder, and salt & pepper to taste.
