Description

Crunchy Coconut Chicken is a flavorful and crispy fried chicken dish featuring a tropical coconut and panko breadcrumb coating. Paired with a refreshing Napa cabbage salad and a spicy, tangy mayo, this recipe delivers a perfect balance of crunchy texture and vibrant flavors inspired by Southeast Asian cuisine.

Ingredients

For the Chicken

  • 3 (8-oz.) boneless, skinless chicken breasts
  • 1 cup canned coconut milk
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. fish sauce
  • 1 1/2 cups (180 g) all-purpose flour
  • 2 Tbsp. cornstarch
  • 1 tsp. kosher salt
  • Freshly ground black pepper, to taste
  • 3 large eggs
  • 1 1/2 cups panko breadcrumbs
  • 1 1/2 cups unsweetened shredded coconut
  • Vegetable oil, for frying (about 2 cups)

For the Spicy Mayo

  • 1/2 cup mayonnaise
  • 2 Tbsp. sriracha
  • 1 tsp. honey

For the Cabbage Salad

  • 1 head Napa cabbage, thinly sliced
  • 2 Persian cucumbers, quartered and thinly sliced
  • 1 avocado, cubed
  • 1 small serrano chile, thinly sliced
  • 1/2 cup coarsely chopped fresh cilantro
  • 1 (1/2-inch) piece ginger, peeled and finely grated
  • 2 Tbsp. fresh lime juice
  • 1 tsp. reduced-sodium soy sauce
  • 1/2 tsp. fish sauce
  • Lime wedges, for serving

Instructions

  1. Prepare the Chicken: Cut the chicken breasts in half horizontally to create thinner pieces. Place them between plastic wrap or into a resealable bag, then pound with a meat mallet or rolling pin until about 1/4 inch thick for even cooking and tenderness.
  2. Marinate the Chicken: In a large bowl, mix canned coconut milk, fresh lime juice, and fish sauce. Add the chicken pieces, toss to coat evenly, then refrigerate for at least 30 minutes or up to 1 hour to allow the flavors to infuse.
  3. Set Up Breading Stations: In one shallow bowl, whisk together all-purpose flour, cornstarch, kosher salt, and freshly ground black pepper. In a second bowl, beat the eggs thoroughly. In a third bowl, combine panko breadcrumbs with unsweetened shredded coconut.
  4. Bread the Chicken: Remove chicken from marinade, letting excess drip off. Dredge each piece first in the flour mixture, then dip into beaten eggs, and finally coat completely with the panko-coconut mixture, gently pressing to adhere the coating well.
  5. Fry the Chicken: Heat about 2 cups of vegetable oil in a large skillet over medium-high heat until it reaches approximately 350°F. Fry chicken pieces in batches, cooking about 3 to 4 minutes per side until golden brown and crispy. Transfer cooked chicken to a wire rack to drain excess oil and retain crispiness.
  6. Make the Spicy Mayo: In a small bowl, mix mayonnaise, sriracha, and honey until smooth. Refrigerate until ready to serve. This can be made up to a week ahead and stored chilled.
  7. Prepare the Cabbage Salad: In a large bowl, combine thinly sliced Napa cabbage, quartered and sliced Persian cucumbers, cubed avocado, thinly sliced serrano chile, and chopped fresh cilantro. In a separate small bowl, whisk grated ginger, fresh lime juice, reduced-sodium soy sauce, and fish sauce to create the dressing. Pour the dressing over the salad and toss gently to coat evenly.
  8. Serve: Plate the crispy coconut chicken alongside the cabbage salad and a side of spicy mayo. Garnish with fresh lime wedges for squeezing over the chicken or salad for added brightness.

Notes

  • Use unsweetened shredded coconut for the best texture and flavor in the coating.
  • Make sure the oil temperature stays consistent around 350°F for optimal frying results.
  • Chicken can be pounded thinner or thicker depending on preference; just adjust frying time accordingly.
  • Spicy mayo can be made ahead and refrigerated up to one week.
  • For a lighter version, the chicken can be oven-baked but will lose some crunchiness.
  • This recipe pairs well with jasmine rice or steamed vegetables for a fuller meal.
