Instructions

  1. Prepare the Vegetables and Fruit: Peel and finely shred the kohlrabi and beets. Core and cut the apple into thin matchsticks. Place all these prepared ingredients, along with minced parsley and chopped green onions, into a large salad bowl.
  2. Make the Citrus Dressing: In a smaller bowl, whisk together the orange zest, the juice of one orange, the juice of one lime, olive oil, and salt and pepper to taste until fully combined.
