Description

These Crumbl No-bake Marshmallow Peanut Butter Cornflake Cookies are a deliciously easy treat combining the crunch of cornflakes with the sweet, creamy blend of peanut butter and melted marshmallows. Perfect for a quick dessert or snack, they require no baking and come together in just a few simple steps.

Ingredients

Main Ingredients

  • 4 tbsp salted butter
  • 3/4 cup smooth peanut butter
  • 10 oz mini marshmallows
  • 7 cups cornflakes
  • 1 oz mini marshmallows (to mix in at the end)
  • 1/3 cup peanut butter chips (optional)

For Drizzle

  • 2 tbsp peanut butter chips
  • 1/2 tsp vegetable or canola oil

Instructions

  1. Melt butter and peanut butter: In a large pot over medium-low heat, melt the butter and smooth peanut butter together, stirring frequently to combine the ingredients evenly.
  2. Add mini marshmallows: Add 10 oz of mini marshmallows to the pot and continue stirring constantly until they have fully melted and created a smooth mixture. Remove the pot from heat once melted.
  3. Mix in cornflakes and extras: Stir the cornflakes into the melted mixture until all are fully coated. Then gently fold in the remaining 1 oz of mini marshmallows and the optional 1/3 cup peanut butter chips, being careful not to overmix to keep the texture light.
  4. Shape the cookies: Spray a large cookie scooper with nonstick spray, scoop out 10 equally sized portions of the mixture onto a parchment-lined baking sheet. Grease your fingers to gently press each portion to about 1 inch thickness without compacting them too densely.
  5. Prepare peanut butter drizzle: Melt 2 tbsp peanut butter chips and 1/2 tsp vegetable or canola oil in the microwave in 30-second increments, stirring between each. Transfer the melted mixture to a ziplock bag and snip a small corner off to create a piping bag.
  6. Drizzle and set: Drizzle the melted peanut butter over each cookie using the ziplock bag. Allow the cookies to set at room temperature for 20-30 minutes until firm before serving.

Notes

  • Use smooth peanut butter for the best texture in the cookies.
  • Be gentle when folding in the extra marshmallows and chips to keep the cookies light and airy.
  • The optional peanut butter chips add extra flavor and texture; omit if desired.
  • If you prefer, you can substitute vegetable or canola oil with another neutral oil for the drizzle.
  • Store any leftovers in an airtight container at room temperature for up to 3 days.
