Description

Crispy Parmesan Carrots are a delicious, savory side dish featuring tender carrots coated in a flavorful blend of garlic, rosemary, and red pepper flakes, then baked to golden perfection with a crispy parmesan crust. This easy recipe delivers a perfect balance of spice, herbaceous aroma, and cheesy crispiness, making it an ideal accompaniment for any meal.

Ingredients

Carrots and Seasoning

  • 6 medium carrots, peeled
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary, chopped

Cheese and Garnish

  • 2 cups (200 g) parmesan cheese, grated, divided
  • Parsley, chopped for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper to prevent sticking and easy cleanup.
  2. Prepare the Carrots: Cut the peeled carrots crosswise into 2-inch sections. Then slice each 2-inch section lengthwise in half to create manageable pieces for baking.
  3. Mix Seasoning: In a large bowl, combine the olive oil, kosher salt, minced garlic, onion powder, red pepper flakes, and chopped fresh rosemary. Stir well to create a flavorful oil mixture.
  4. Coat the Carrots: Add the cut carrots to the seasoning mixture and toss thoroughly to ensure all pieces are evenly coated.
  5. Prepare the Baking Sheet: Sprinkle 1½ cups of grated parmesan cheese evenly over an 8×12-inch area of the parchment paper-lined sheet pan, just enough to cover where the carrots will be placed.
  6. Arrange Carrots: Place each carrot piece onto the parmesan cheese bed cut side down in a tight, rectangular pattern, avoiding gaps for even baking and maximum crispiness.
  7. Top with Parmesan: Sprinkle the remaining ½ cup of grated parmesan cheese evenly over the arranged carrots to create a crispy, cheesy topping.
  8. Bake: Place the sheet pan in the preheated oven and bake for 30-35 minutes, or until the carrots are tender and can be easily pierced with a knife, and the parmesan is golden and crisp.
  9. Serve: Remove from oven, garnish with chopped parsley, and serve warm for the best flavor and texture.

Notes

  • Air Fryer Instructions: Line the basket of your air fryer with parchment paper and sprinkle parmesan cheese on the parchment. Add carrots cut side down and spray the tops lightly with cooking spray. Air fry at 375°F (190°C) for 8-10 minutes or until carrots are tender and easily pierced.
  • You can adjust red pepper flakes to taste or omit if you prefer a milder flavor.
  • Fresh rosemary adds the best flavor, but dried rosemary can be substituted using about ½ teaspoon.
  • For extra crispiness, ensure the carrots are placed tightly together on the parmesan cheese layer.
