Ingredients
Tomato Mixture
- 20 oz. cherry tomatoes (2 pints)
- 1/2 small white onion, minced
- 1/4 cup sun-dried tomatoes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tsp. Italian seasoning
- Salt and pepper, to taste
Cream Cheese
- 8 oz. full-fat cream cheese
Other Ingredients
- 2 cups fresh baby spinach, gently torn
- 8 oz. pasta of choice, cooked and drained
- Basil, optional garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the tomato and cream cheese mixture.
- Prepare Tomato Mixture: In an oven-safe casserole dish, combine the cherry tomatoes, minced onion, sun-dried tomatoes, olive oil, minced garlic, Italian seasoning, salt, and pepper. Stir well to evenly distribute the ingredients.
- Add Cream Cheese: Nestle the block of full-fat cream cheese right in the center of the tomato mixture in the dish.
- Bake: Place the casserole dish in the oven and bake uncovered for 35 to 40 minutes, until the cream cheese is golden on top and looks like it’s starting to fall apart.
