Description

This Cranberry Whipped Feta Dip is a festive and creamy appetizer perfect for holiday gatherings. It features tangy whipped feta cheese combined with a sweet-tart homemade cranberry sauce, topped with crunchy pistachios, crushed red pepper flakes, and a drizzle of honey. Quick to prepare in under 40 minutes, this dip offers a delightful blend of savory, sweet, and spicy flavors that pairs wonderfully with crackers, pita chips, crostini, or fresh vegetables.

Ingredients

Cranberry Sauce

  • ½ cup orange juice
  • 1 cup granulated sugar
  • 12 ounces fresh or frozen cranberries (1 bag)

Whipped Feta

  • 1 block (8 ounces) feta cheese
  • ½ cup cream cheese (or Greek yogurt as an alternative)
  • 2 tablespoons extra virgin olive oil

For Serving (Optional)

  • 2 tablespoons pistachios, chopped
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoon honey

Instructions

  1. Make the Cranberry Sauce: In a medium saucepan, combine the orange juice, granulated sugar, and cranberries. Stir well and bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to low and simmer for 10 minutes, allowing most of the cranberries to burst.
  2. Thicken the Sauce: Stir the cranberry mixture constantly, mashing the cranberries with the back of a spoon until the sauce thickens to your desired consistency. Remove from heat and let it cool to room temperature, about 15-20 minutes.
  3. Prepare the Whipped Feta: In a food processor or blender, add the feta cheese, cream cheese, and extra virgin olive oil. Process until smooth and creamy. If the texture is too thick, add 1 teaspoon of water at a time until you reach the preferred consistency.
  4. Assemble the Dip: Transfer the whipped feta mixture to a serving bowl. Use the back of a spoon to create a swirl pattern on the surface. Spoon the cooled cranberry sauce evenly over the whipped feta layer.
  5. Garnish and Serve: Sprinkle chopped pistachios and crushed red pepper flakes on top of the cranberry sauce. Drizzle with honey if desired. Serve immediately with crackers, pita chips, crostini, or fresh vegetables for dipping.

Notes

  • Storage: Store leftover dip tightly covered with plastic wrap or in an airtight container in the refrigerator for up to 3-4 days.
  • Serving Tip: Before serving leftovers, let the dip come to room temperature for 15-20 minutes to soften and enhance flavor melding.
  • Substitution: For convenience, substitute homemade cranberry sauce with 2 cups of prepared cranberry sauce.
  • Texture Adjustment: Adjust whipped feta consistency by adding water 1 teaspoon at a time if needed, to achieve a smooth, spreadable dip.
