Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, whisk together 2 cups gluten-free flour blend, 2 tablespoons aluminum-free baking powder, and 1 teaspoon salt until well blended. Add 1 teaspoon xanthan gum if your blend lacks a binder.
  2. Cut in the Butter: Add the cold 5 tablespoons of unsalted butter to the dry ingredients. Using a pastry blender, chop the butter into the mixture until it resembles coarse crumbs with visible butter pieces. If a pastry blender is not available, freeze the butter and grate it finely before mixing.
  3. Add Milk to Form Dough: Pour 1 cup of milk into the mixture and gently stir to form a soft, firm, workable dough. Avoid overworking to prevent the butter bits from melting and losing flakiness.
  4. Preheat Oven: Set your oven to 425ºF to prepare for baking.
  5. Shape the Biscuits: Place the dough on wax paper or a silicone mat dusted lightly with gluten-free flour if necessary. Press the dough out to about 1 1/2 inch thickness.
