  • 3 ripe avocados
  • 1/4 cup diced yellow onion (red onion works too)
  • 1 roma tomato, diced
  • 2 garlic cloves, minced
  • 1 lime, juiced (about 2 Tablespoons)
  • 1/2 teaspoon kosher salt or flaky sea salt, more or less to taste
  • 1/4 cup finely chopped cilantro leaves and stems
  • 1 jalapeno pepper, finely diced (optional)


Instructions

  1. Peel and Mash the Avocados: Peel the 3 ripe avocados and place them in a medium bowl. Using a fork or an authentic molcajete, mash the avocados until you achieve a creamy texture with some chunks remaining for texture.
  2. Add Remaining Ingredients: Add the lime juice, diced yellow onion, diced roma tomato, minced garlic, kosher salt, chopped cilantro, and finely diced jalapeno (if using) to the mashed avocados. Mix gently to combine all ingredients without overly mashing the avocado to keep a balance of creamy and chunky texture.
  3. Adjust Seasoning and Serve: Taste the guacamole and adjust the seasoning by adding more salt, lime juice, or cilantro if desired. Garnish with extra cilantro leaves if preferred. Serve immediately with tortilla chips or as desired.
