Description

Delicious and easy-to-make Chex Bars feature crunchy Chex cereal coated in a creamy peanut butter and marshmallow mixture, topped with a rich chocolate peanut butter drizzle. Perfect as a sweet snack or dessert, these bars are chewy, flavorful, and sure to satisfy any sweet tooth.

Ingredients

Chex Cereal Treats

  • 7 cups Chex Cereal (12-ounce box Peanut Butter Chex, Rice Chex, or Corn Chex)
  • 3 tablespoons salted butter
  • ⅓ cup creamy peanut butter
  • 10 ounces marshmallows

Chocolate Drizzle

  • ⅓ cup semi-sweet chocolate chips
  • 1 tablespoon creamy peanut butter

Instructions

  1. Prepare the Bowls and Pan: Grease an extra-large mixing bowl and an 8-inch or 9-inch square baking pan with butter to prevent sticking.
  2. Measure Cereal: Pour the 7 cups of Chex Cereal into the greased mixing bowl and set it aside.
  3. Melt Butter and Peanut Butter: Cut the butter into slices and place in a 3 or 4-quart non-stick saucepan. Add ⅓ cup creamy peanut butter and set the pan over low heat. Stir frequently until fully melted and combined.
  4. Add and Melt Marshmallows: Add the marshmallows to the butter and peanut butter mixture. Toss to coat and let the marshmallows begin melting, stirring occasionally until about 75% melted, approximately 6-8 minutes.
  5. Finish Melting Marshmallows: Remove the pan from heat and stir until the marshmallows are completely melted, smooth, and creamy.
  6. Combine with Cereal: Pour the melted peanut butter and marshmallow mixture over the Chex cereal in the mixing bowl. Stir gently until the cereal is evenly coated.
  7. Spread Mixture: Gently spread the coated cereal mixture into the prepared baking pan without pressing too firmly to avoid crushing the cereal.
  8. Make Chocolate Peanut Butter Drizzle: In a small saucepan, combine ⅓ cup semi-sweet chocolate chips with 1 tablespoon creamy peanut butter. Heat over low heat, stirring frequently until about 75% melted, then remove from heat and stir until completely smooth.
  9. Drizzle Chocolate: Spoon the melted chocolate into a small zip-top bag, snip off a corner, and drizzle evenly over the cereal treats in the pan.
  10. Cool and Set: Allow the chocolate-topped bars to cool at room temperature for at least 2 hours until chocolate firms up.
  11. Cut and Serve: Once set, cut the chewy Chex bars into squares and enjoy.
