Description

Delicious and healthy Chocolate-Covered Raspberry Bites made with fresh raspberries, chia seeds, and rich dark chocolate. These no-bake treats offer a perfect balance of tart and sweet, enhanced by a hint of sea salt and a touch of coconut oil for smooth chocolate coating. Ideal for a quick snack or a guilt-free dessert, they are easy to prepare and freeze well for long-term enjoyment.

Ingredients

Raspberry-Chia Mixture

  • 1 heaping cup raspberries (6 ounces / 170g)
  • 1 tablespoon chia seeds
  • pinch sea salt

Chocolate Coating

  • 5 ounces dark chocolate (or preferred chocolate)
  • 1 teaspoon coconut oil

Instructions

  1. Prepare the Baking Sheet: Line a quarter sheet pan with parchment paper and set aside to keep your bites from sticking and for easy cleanup.
  2. Mash Raspberries: In a small bowl, use the back of a fork to gently mash the raspberries until they are broken down but still slightly chunky for texture.
  3. Add Chia Seeds and Salt: Stir in the chia seeds and a pinch of sea salt until well combined. Allow this mixture to sit at room temperature for 5-10 minutes to thicken due to the chia seeds absorbing moisture.
  4. Form Raspberry Bites: Scoop small spoonfuls (about 1 tablespoon each) of the raspberry-chia mixture onto the prepared baking sheet, forming 8-10 pieces depending on size. Place the tray in the freezer for about 1 hour or until the bites are fully set and firm.
  5. Melt Chocolate: Place the chocolate in a microwave-safe bowl and heat for 30-60 seconds, stirring after the first 30 seconds to ensure even melting. Mix in the coconut oil thoroughly until smooth and glossy.
  6. Coat Raspberry Bites: Dip each frozen raspberry-chia bite into the melted chocolate until fully coated, then place back onto the parchment-lined baking sheet. While the chocolate is still wet, sprinkle each piece with a tiny bit of flaky sea salt for enhanced flavor contrast.
  7. Freeze to Set Chocolate: Return the chocolate-dipped bites to the freezer and chill for another hour or until the chocolate coating is completely set and firm.
  8. Serve and Enjoy: Remove from the freezer and allow the raspberry bites to soften slightly at room temperature for 1-2 minutes before enjoying for the best texture and flavor.

Notes

  • Storage: After freezing, transfer the bites into an airtight container and store in the freezer for up to 3 months to maintain freshness.
  • Serving Tip: Allow the frozen raspberry bites to soften at room temperature for 1-2 minutes before eating to enhance flavor and texture.
