Ingredients

Banana Ice Cream Filling

  • 2 large, ripe bananas (about 210g)
  • ¼ cup sunbutter (or any creamy nut/seed butter)
  • 1 Tbsp honey (or maple syrup)
  • 1 tsp vanilla extract
  • 2 scoops collagen (optional)
  • ¼ cup water

Chocolate Coating

  • 1 cup dark chocolate chunks (or chips)
  • 1 Tbsp coconut oil


Instructions

  1. Blend the Filling: Place all banana ice cream filling ingredients into a blender and blend until the mixture is smooth and consistent in texture, creating a creamy ice cream base.
  2. Prepare the Molds: Insert a popsicle stick into each slot of a silicone popsicle mold, making sure each stick is secure for 8 bars total. Pour the blended ice cream filling evenly into each mold slot.
  3. Freeze the Bars: Place the filled silicone molds on a baking sheet or flat surface to ensure stability and set them in the freezer. Freeze for at least 4 hours, or longer if using larger molds, until completely frozen solid.
  4. Melt the Chocolate Coating: In a small saucepan over low heat, combine the dark chocolate chunks and coconut oil. Stir frequently until the chocolate and oil are fully melted and smooth.
  5. Dip the Frozen Bars: Remove the frozen banana bars from the molds and dip each bar individually into the melted chocolate. You can dip directly in the saucepan or pour the coating into a glass or ceramic cup for easier dipping.
  6. Set the Chocolate Coating: Place the chocolate-coated bars on parchment paper and allow the chocolate to set and harden before serving. You may place them back in the freezer to speed up the setting process if desired.
