These mini treats are easy to prepare in a food processor and baked to perfection, resulting in fudgy, chocolatey bites that are perfect for a healthy snack or dessert.
Ingredients
Dry Ingredients
- 2 tbsp regular cocoa powder
- 1 tbsp Dutch cocoa powder or additional regular cocoa powder
- 1/3 cup rolled oats or 1/2 cup almond flour (for keto option)
- 1/4 tsp salt
- 1/2 tsp baking powder
Wet Ingredients
- 1 can black beans (or 1 1/2 cups cooked black beans)
- 1/2 cup pure maple syrup, honey, or agave
- 1/4 cup oil (such as vegetable or coconut) or almond or peanut butter
- 2 tsp pure vanilla extract
Add-ins
- 1/2 cup mini chocolate chips, plus more for garnish
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan. You can also use a regular muffin pan or an 8×8-inch baking pan if preferred.
- Blend Ingredients: In a high-quality food processor, combine all ingredients except the chocolate chips. Process until the mixture is smooth and well combined, ensuring no bean chunks remain.
- Add Chocolate Chips: Stir the mini chocolate chips into the batter gently. Adding these chips is essential for the best flavor and texture.
- Fill the Pan: Portion the batter evenly into the prepared muffin pan. Optionally, press a few more chocolate chips onto the tops of each brownie bite for garnish.
- Bake: Place the pan on the center rack of the oven and bake for 10 minutes until the brownies are set and a toothpick inserted comes out mostly clean with a few moist crumbs.
- Cool and Remove: Remove the pan from the oven and let the brownie bites cool for at least 10 minutes. Run a knife around the edges of each brownie to loosen them and carefully pop them out of the pan.
