Ingredients

Chipotle Lime Chicken

  • 3 tablespoons lime juice
  • 1 1/2 tablespoons olive oil
  • 1 chipotle chile in adobo sauce, finely chopped
  • 2 tablespoons chopped cilantro
  • 1 tablespoon honey
  • Kosher salt and fresh ground black pepper to taste
  • 1 1/2 pounds boneless skinless chicken breasts

Mango Salsa

  • 2 cups diced mango
  • 1/4 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 2 tablespoons chopped cilantro
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder
  • Kosher salt and fresh ground black pepper to taste


Instructions

  1. Prepare the Chicken Marinade: In a bowl, whisk together lime juice, olive oil, finely chopped chipotle chile in adobo, chopped cilantro, honey, kosher salt, and freshly ground black pepper to taste until well combined.
  2. Marinate the Chicken: Pour the marinade into a freezer bag. Add the boneless skinless chicken breasts, seal the bag after pressing out the air, and massage the marinade into the chicken to ensure even coating. Refrigerate for at least 2 hours, preferably overnight, for optimal flavor absorption.
  3. Preheat and Prepare Grill: Heat the grill to 400°F (204°C). Spray the grill grates with cooking spray to prevent sticking.
  4. Grill the Chicken: Remove the chicken from the marinade, shaking off any excess. Place the chicken breasts on the grill and cook for 6 to 8 minutes on one side. Flip and grill for another 6 to 8 minutes or until the internal temperature reaches 165°F (74°C).
  5. Rest the Chicken: Remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute before slicing.
  6. Prepare Mango Salsa: While the chicken is grilling, combine diced mango, red onion, red bell pepper, chopped cilantro, lime juice, chili powder, kosher salt, and freshly ground black pepper in a bowl. Stir well and adjust seasoning as needed.

  • For best results, marinate the chicken overnight to enhance the flavors.
