Description

This Chickpea Tikka Masala is a flavorful and creamy vegan dish made with chickpeas simmered in a spiced coconut milk and tomato sauce. It offers a rich and satisfying meal, perfect for a quick weeknight dinner or a comforting weekend treat. The optional onions and bell peppers add extra texture and sweetness, enhancing the overall taste profile of this easy-to-make Indian-inspired recipe.

Ingredients

Main Ingredients

  • 2 15 oz cans chickpeas, drained
  • 2 15 oz cans chopped tomatoes
  • 1 cup coconut milk
  • 6 cloves garlic, peeled and chopped
  • 4 teaspoons garam masala
  • Salt, to taste
  • Pepper, to taste

Optional Ingredients

  • ½ cup chopped onions
  • 1 cup bell pepper, chopped
  • 1 tablespoon coconut oil (or vegetable broth for oil-free cooking)

Instructions

  1. Prepare the vegetables (Optional): If using onions and bell peppers, heat coconut oil or vegetable broth in a pot over medium heat. Add the chopped onions and bell peppers and sauté for about 5 minutes until they soften and become fragrant.
  2. Add main ingredients: Into the pot, add the drained chickpeas, chopped tomatoes, coconut milk, chopped garlic, and garam masala. Stir well to combine all ingredients evenly.
  3. Season and cook: Season the mixture with salt and pepper to taste. Bring the mixture to a simmer over medium heat, then reduce the heat and let it cook gently for 10 minutes to allow flavors to meld and sauce to thicken slightly.
  4. Serve: Divide the Chickpea Tikka Masala onto plates, or enjoy it straight from the pot. It pairs well with rice or flatbreads for a complete meal.

Notes

  • You can omit the optional onions and bell peppers for a simpler version.
  • Use vegetable broth instead of oil for an oil-free and lighter dish.
  • Adjust the amount of garam masala according to your spice preference.
  • For a thicker sauce, let it simmer longer or mash some chickpeas slightly.
  • This recipe makes a great leftover and tastes even better the next day.
