- 1 15-ounce can chickpeas, rinsed and drained
- ¼ cup all purpose flour
- ¼ cup grated Parmesan cheese
- 1 tablespoon chopped parsley
- 1 teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons water
- 2 tablespoons canola oil

Instructions
- Combine Ingredients: In a medium bowl, combine the rinsed and drained chickpeas, all purpose flour, grated Parmesan cheese, chopped parsley, cumin, garlic powder, salt, and black pepper. Mix these ingredients thoroughly for an even flavor distribution.
- Mix and Mash: Add 2 tablespoons of water to the mixture and use a fork or potato masher to blend everything well, creating a cohesive batter that will hold together when cooked.
- Form Patties: Divide the chickpea mixture into 6 equal portions. Shape each portion into thin patties to ensure even cooking and crispiness on the outside.
- Heat Oil: In a large nonstick pan, heat 2 tablespoons of canola oil over medium heat until it shimmers but does not smoke. Properly heated oil is key for achieving a golden, crispy crust.
- Cook Fritters: Add the patties to the hot pan and cook for about 2 to 4 minutes on each side, or until each side is browned and the fritters are cooked through.
- Drain Excess Oil: Remove the fritters from the pan and place them on a plate lined with paper towels to absorb any excess oil, keeping them crispy and not greasy.
- Serve: Serve the chickpea fritters warm with tahini sauce or your choice of dipping sauce for a flavorful appetizer or snack.

- Freezing: Freeze patties before cooking by laying them flat in the freezer for at least 4 hours, then store in an airtight bag. Thaw overnight in the fridge before cooking. Cooked fritters can also be frozen and reheated in a 350°F oven until heated through.
