Cheese

- 1.5 cups milk
- 2 tablespoons melted butter
- 2 tablespoons flour
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt to taste

Instructions
- Preheat and prepare dish: Preheat the oven to 375°F (190°C / gas mark 5). Butter a baking dish thoroughly to prevent sticking and to add rich flavor.
- Slice potatoes: Peel the potatoes if desired and slice them thinly and evenly. Arrange the slices in layers evenly inside the prepared baking dish.
- Make the cheese sauce: In a saucepan over medium heat, melt the butter. Whisk in the flour and cook while stirring until the mixture becomes smooth and slightly bubbly. Gradually add the milk and cream while whisking continuously to avoid lumps. Season the sauce with onion powder, garlic powder, salt, and pepper. Bring to a boil, then reduce to a simmer and cook until thickened, stirring occasionally.
- Add cheese to sauce: Stir in the shredded mozzarella and cheddar cheeses until fully melted and smooth.
- First baking stage: Pour half of the cheese sauce evenly over the layered potatoes. Cover the dish tightly with foil and bake in the preheated oven for 30 minutes.
- Second baking stage: Remove the foil carefully and pour the remaining cheese sauce over the potatoes. Return the dish to the oven and bake uncovered for another 60 minutes, or until the potatoes are tender and the top is golden and bubbly.
- Garnish and serve: Once baked, garnish the scalloped potatoes with chopped parsley or dill. Serve hot or warm for best taste.
