Ingredients
Quinoa Patty Mixture
- 1 cup cooked quinoa
- 2 eggs
- ½ teaspoon oregano
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup mozzarella cheese
- ¼ cup red onion, finely minced
- 1 cup panko breadcrumbs, gluten-free if desired
For Cooking
- 4 tablespoons avocado oil, divided
Instructions
- Prepare the Quinoa Mixture: In a medium bowl, combine the cooked quinoa, eggs, oregano, garlic powder, salt, and black pepper. Stir thoroughly, then fold in the mozzarella cheese and finely minced red onion until evenly mixed.
- Add Breadcrumbs and Form Patties: Add the panko breadcrumbs to the quinoa mixture and stir well. Let the mixture sit for a few minutes to allow the breadcrumbs to absorb moisture. Wet your hands with water, scoop about ¼ cup of the mixture, and shape it into a patty. Aim to make approximately 10 patties in total.
- Heat the Oil: Place a large non-stick skillet over medium heat and add 2 tablespoons of avocado oil. Allow the oil to heat before adding the patties.
- Cook the Patties: Place half of the patties in the hot skillet. Cook each side for about 3-4 minutes or until they turn golden brown and are cooked through. Remove and set aside on a plate lined with paper towels.
- Cook Remaining Patties: Add the remaining 2 tablespoons of avocado oil to the skillet and repeat the cooking process with the remaining patties.
Notes
- Storage: Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Freezing Instructions: To freeze before cooking, arrange patties on a flat baking sheet and freeze for at least 4 hours. Transfer to an airtight bag and thaw overnight in the refrigerator before cooking. To freeze after cooking, let patties cool completely, store in an airtight bag, and thaw overnight in the fridge. Reheat in a 350°F oven until warmed through.
