These Cheesy Cauliflower Bites are a delicious and healthy snack made with steamed and riced cauliflower mixed with mature cheddar cheese and spices, then baked to golden perfection in mini muffin tins. They’re perfect as a low-carb appetizer or a savory bite to enjoy with your favorite dipping sauce.
Ingredients
Cauliflower Mixture
- 2 cups cauliflower florets (see Note 1)
- 1 cup mature cheddar cheese, shredded
- 1 egg
- 1/4 tsp oregano
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- Pinch of salt and pepper
Instructions
- Preheat Oven and Prepare Muffin Tins. Preheat your oven to 375°F (190°C) and grease mini muffin tins lightly with oil to prevent sticking.
- Steam the Cauliflower. Place cauliflower florets in a steaming basket over a saucepan of boiling water and steam for 8-10 minutes until tender.
- Rice the Cauliflower. Transfer steamed cauliflower to a food processor and pulse until it achieves a rice-like texture. Remove and squeeze out as much water as possible using a clean kitchen towel or cheesecloth to ensure the bites hold together well.
- Mix Ingredients. In a mixing bowl, combine the riced cauliflower, shredded cheddar cheese, egg, oregano, onion powder, garlic powder, salt, and pepper. Stir until thoroughly mixed.
- Fill Muffin Tins. Scoop the mixture into the prepared muffin tins, pressing down to create flat, compact bites for even baking.
- Bake. Bake in the preheated oven for 12-15 minutes or until the tops are golden brown and the centers are set and firm to the touch.
- Cool and Serve. Allow the bites to cool slightly before removing them from the tins. Serve warm with your favorite dipping sauce for a tasty snack.
Notes
- Note 1 – If you are using pre-riced cauliflower instead of florets, use approximately 1 1/4 cups to replace the 2 cups of florets.
