Description

These Cheeseburger Spring Rolls combine the best of two classic favorites: juicy seasoned minced beef cooked with onions and spices, creamy melted cheddar and red Leicestershire cheeses, tangy chopped pickled gherkins all wrapped in crispy golden spring roll wrappers. Fried to perfection and served with a homemade special sauce blend of mayonnaise, tomato ketchup, and mild yellow mustard, they are a deliciously indulgent appetizer or snack that’s sure to impress.


Ingredients

Beef Filling

  • 500 g (1.1 lb) minced beef (12-15% fat for juiciness)
  • 1 small onion, peeled and finely chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • 75 g (3/4 packed cup) strong cheddar cheese, grated
  • 75 g (3/4 packed cup) red Leicestershire cheese, grated
  • 2 tbsp finely chopped pickled gherkins (dill pickles, cornichons, or burger pickle slices)

Spring Rolls

  • 12 spring roll wrappers
  • Oil for deep frying (enough for about 4-5 inches depth)

Special Sauce

  • 6 tbsp mayonnaise
  • 6 tbsp tomato ketchup
  • 1 tbsp mild yellow mustard (e.g., French’s yellow mustard)


Instructions

  1. Cook Beef Mixture: Heat a large frying pan over medium-high heat. Add minced beef, chopped onion, salt, and pepper. Fry for 6-7 minutes, stirring regularly to break up meat chunks, until beef is browned and onion is soft.
  2. Cool Beef Mixture: Turn off heat and allow the beef mixture to cool for 20-30 minutes to near room temperature. You may transfer it to a bowl to cool faster, which helps with handling and mixing cheese later.
  3. Make Special Sauce: While beef is cooling, combine mayonnaise, tomato ketchup, and mild yellow mustard in a small bowl. Mix well and set aside.
  4. Add Cheese and Gherkins: Once beef mixture is cooled, stir in grated cheddar, grated red Leicestershire cheese, and finely chopped pickled gherkins until evenly combined.
  5. Heat Oil for Frying: Heat oil in a heavy-based pan to 190°C (375°F). Use a thermometer to maintain the correct temperature for deep frying.
  6. Assemble Spring Rolls: Place one spring roll wrapper on a clean surface with a corner pointing towards you. Keep remaining wrappers covered with a damp cloth to prevent drying. Place a heaped tablespoon of the beef filling about an inch from the bottom corner. Shape the filling into a horizontal sausage shape.
  7. Roll Spring Rolls: Fold the bottom corner over the filling, tuck in the two side edges, then roll tightly towards the top corner to form a cigar-shaped spring roll. Seal the edge with a little water applied on your fingers.
  8. Repeat Assembly: Place the finished spring roll on a plate or baking tray. Repeat wrapping with the remaining filling and wrappers.
  9. Fry Spring Rolls: Carefully add six spring rolls to the hot oil without overcrowding. Fry for 3-4 minutes, turning frequently until golden brown and crispy on all sides.
  10. Drain and Serve: Remove fried spring rolls and place them on a plate lined with kitchen paper to absorb excess oil. Repeat frying with remaining spring rolls.
  11. Serve: Serve the crispy cheeseburger spring rolls hot with the prepared special sauce for dipping.
