Ingredients
Main Ingredients
- 3 medium potatoes, cut into small cubes
- 4 tablespoons dairy free butter
- 10 oz vegan ground beef
- 2 celery stalks, chopped
- 1 carrot, chopped
- 1 cup vegetable broth
- 10 oz vegan cheese
- ½ cup onions, diced
- 3 cloves garlic, pressed
- 14 oz vegan sour cream
- 1 teaspoon dried parsley
- ½ teaspoon hot sauce
- Salt, pepper to taste
Instructions
- Melt Butter and Cook Vegan Ground Beef: In a casserole or large pot, melt the dairy free butter over medium heat. Add the vegan ground beef and cook for about 2 minutes, stirring occasionally, until slightly browned. Remove the vegan ground beef from the pot, leaving as much butter in the pot as possible.
- Sauté Vegetables: Add diced onions, pressed garlic, chopped celery, chopped carrots, and cubed potatoes to the pot. Cook all the vegetables together, stirring occasionally for about 3 minutes to soften and release their flavors.
- Add Broth and Sour Cream, Simmer: Pour in the vegetable broth and vegan sour cream. Stir well to combine. Bring the soup to a simmer and cook until the potatoes are tender, about 10 minutes. Stir occasionally to prevent sticking.
- Incorporate Cheese and Return Vegan Ground Beef: Stir in the vegan cheese and continue cooking until the cheese melts smoothly into the soup. Then add the cooked vegan ground beef back to the soup along with dried parsley, hot sauce, and a pinch of salt and pepper to taste. Heat for an additional 2 minutes to meld all flavors together.
- Serve and Enjoy: Ladle the hot soup into bowls and serve immediately. Enjoy your deliciously creamy and savory vegan cheeseburger soup!
Notes
- Use dairy free butter to keep the soup vegan-friendly.
- Adjust hot sauce quantity according to your spice preference.
- You can substitute vegan ground beef with plant-based crumbles or textured vegetable protein.
- If vegan cheese is not available, nutritional yeast can add cheesiness but will alter texture.
- For a thicker soup, reduce vegetable broth or add a mashed potato to the base.
