A creamy and crunchy Cauliflower Potato Salad that replaces traditional potatoes with tender steamed cauliflower. Ingredients

Vegetables & Eggs

  • 1 large cauliflower head
  • 4-6 hard boiled eggs, divided

Dressing & Seasoning

  • 1 cup mayonnaise
  • 1/4 cup prepared mustard
  • 1/4 cup dill relish
  • 1 teaspoon white vinegar
  • 1 tablespoon fresh dill
  • 1 1/4 teaspoon salt, divided
  • 1/4 teaspoon ground pepper

  • parsley sprig, for garnish


Instructions

  1. Prepare Cauliflower: Cut the cauliflower into bite-size pieces and set them aside for steaming.
  2. Steam Cauliflower: Fill a large pot with 1 inch of water and add 1 teaspoon of salt. Heat until boiling, then reduce to medium heat. Add cauliflower pieces, cover with a lid, and steam for 8-10 minutes until tender when pierced with a fork.
  3. Drain and Cool: Drain the pot and transfer the cauliflower to a colander or strainer. Let it cool for 10 minutes to avoid excess moisture in the salad.
  4. Mix Ingredients: Transfer cooled cauliflower to a large bowl. Slice and dice 3 hard boiled eggs and add to the bowl along with diced celery, dill relish, mayonnaise, mustard, and fresh dill. Gently toss to coat evenly.
  5. Season Salad: Add white vinegar, 1/4 teaspoon salt, and ground pepper. Stir to distribute seasoning evenly. Adjust salt and pepper to taste. Cover and refrigerate for at least 2 hours to allow flavors to meld.
  6. Garnish and Serve: Before serving, sprinkle paprika over the salad and garnish with a sliced hard-boiled egg and a sprig of parsley. Enjoy chilled.
