Ingredients
Beef and Seasonings
- 1.5 lb Ribeye Steak, sliced into thin strips
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
For Cooking and Sauce
- 4 tbsp Butter
- 1 cup Beef Broth
- 1 cup Heavy Cream
- 4 oz Cream Cheese, cubed
- 1/4 cup Grated Parmesan Cheese
- 1/2 cup Sour Cream
Instructions
- Season the Beef: Pat the ribeye steak strips dry with paper towels to remove excess moisture. Toss the strips in garlic powder, onion powder, salt, and black pepper to coat them evenly with the spices.
- Sear the Beef: Heat 2 tablespoons of butter in a large skillet over high heat until it starts to smoke slightly. Add the beef strips in a single layer without overcrowding, working in batches. Sear each side for about 1-2 minutes until a deep brown crust forms and the inside remains pink. Remove seared beef to a plate and set aside.
- Prepare the Sauce Base: Reduce heat to medium and add the remaining 2 tablespoons of butter to the skillet. Pour in the beef broth and scrape the browned bits from the bottom of the pan. Let this simmer for 3-4 minutes until it reduces by roughly half.
- Add Dairy Ingredients: Stir in heavy cream and cubed cream cheese. Whisk continuously until the cream cheese melts completely and the sauce is smooth. Allow the sauce to simmer gently for another 3-4 minutes until it thickens slightly.
- Finish the Sauce: Mix in the grated parmesan cheese until fully melted. Remove the skillet from heat and stir in the sour cream to create a rich, silky sauce. Avoid boiling after adding sour cream to prevent curdling.
- Combine Beef and Sauce: Return the seared beef strips along with their juices back to the skillet. Gently fold the beef into the sauce, then place the skillet over low heat for 2-3 minutes just to warm everything together.
- Serve: Spoon the stroganoff hot into bowls, making sure to include plenty of the creamy sauce with each serving.
Notes
- To ensure a good sear, pat the beef dry before seasoning.
- Do not overcrowd the pan when searing the beef to allow proper browning.
- Simmer the sauce gently after adding sour cream to avoid separation.
- Use full-fat dairy products for the creamiest texture and best flavor.
- This dish is perfect served alone or over low-carb vegetables for a complete carnivore meal.
