Description

Buffalo Chickpea Stuffed Sweet Potatoes are a flavorful and hearty vegan meal featuring roasted sweet potatoes filled with spicy buffalo-seasoned chickpeas, creamy vegan ranch dressing made from soft tofu or cashews, avocado, and fresh green onions. This dish balances spicy, creamy, and fresh elements, making it a perfect easy dinner or lunch option.

Ingredients

Sweet Potatoes

  • 4 medium sweet potatoes
  • Salt and pepper, to taste

Buffalo Chickpeas

  • 19 oz (540 ml) can chickpeas, rinsed and drained (or approx. 2 cups / 360 grams cooked chickpeas)
  • 1 tbsp olive oil
  • 1/3 cup + 1 tbsp buffalo sauce
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • Pinch black pepper

Vegan Ranch Dressing

  • 1/2 package soft tofu (approx. 150 g) – see notes for substitution
  • 2 tbsp fresh lemon juice
  • 2 tbsp apple cider vinegar
  • 1 tbsp water (plus more if needed)
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • 2 tbsp finely chopped fresh dill or chives (optional)

Toppings

  • 1 avocado, sliced
  • Chopped green onion for topping

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (205°C) to prepare for roasting the sweet potatoes.
  2. Bake Sweet Potatoes: Slice sweet potatoes in half lengthwise and season cut sides with salt and pepper. Place cut side down on a baking sheet and bake for 20-35 minutes until tender and easily pierced with a fork. Alternatively, bake them whole after poking a few holes with a fork, until soft.
  3. Prepare Buffalo Chickpeas: In a skillet over medium heat, combine rinsed chickpeas, 1/3 cup buffalo sauce, olive oil, garlic powder, sea salt, and black pepper. Cook for 8-10 minutes, stirring often, mashing some chickpeas to create a textured, thickened, caramelized mixture. Stir in the additional 1 tbsp buffalo sauce at the end.
  4. Make Vegan Ranch Dressing: In a small or mini food processor, high-speed blender, or using an immersion blender, blend the soft tofu, fresh lemon juice, apple cider vinegar, water, garlic powder, onion powder, and sea salt until smooth and creamy. Adjust water to desired consistency. Stir in fresh dill or chives if using.
  5. Assemble the Stuffed Sweet Potatoes: Place 1-2 baked sweet potato halves in a bowl or plate. If whole, cut the sweet potatoes open. Add a generous scoop of buffalo chickpeas, sliced avocado, a drizzle of vegan ranch dressing, and top with chopped green onions.

Notes

  • If you prefer not to use soft tofu for the vegan ranch dressing, substitute with 1/3 cup raw cashews blended with 2 tbsp water. Soak cashews for a few hours and drain for a smoother texture. Adjust water quantity as needed to achieve the desired dressing consistency.
  • Buffalo sauce can be adjusted to taste for spice level.
  • Use fresh herbs like dill or chives to enhance the dressing flavor for a fresh aroma.
  • Sweet potato baking time varies by size; slicing halves will speed up cooking.
