Ingredients
Overnight Oats
- 1/2 cup + 2 tbsp gluten-free old-fashioned rolled oats (large flakes)
- 1/2 cup vanilla, unsweetened almond milk (or your favorite nut milk)
- 5 tbsp vanilla coconut yogurt
- 1/4 tsp pure vanilla extract
- 1 tbsp pure maple syrup OR rice malt syrup OR date nectar OR raw honey
- 1/2 cup fresh organic blueberries
- 1 tbsp chia seeds
- 1 handful crumbled walnuts or granola (for crumble topping)
Blueberry Chia Compote/Jam
- 2 cups fresh blueberries
- 1 heaping tsp lemon zest
- 2.5 tbsp fresh lemon juice
- 2 tbsp pure maple syrup
- 2.5 tbsp chia seeds
- 1/2 tsp vanilla extract
Optional Superfood Add-ons
- 1 tbsp collagen powder
- 1 tbsp lucuma powder
- 1 tbsp hemp hearts
Instructions
- Combine Overnight Oats Ingredients: In a small mason jar or container, mix the rolled oats, nut milk, vanilla coconut yogurt, vanilla extract, sweetener of choice, fresh blueberries, and chia seeds thoroughly to ensure the oats are fully covered in the yogurt and milk base.
- Prepare Blueberry Chia Compote: Place fresh blueberries, lemon zest, lemon juice, maple syrup, chia seeds, and vanilla extract into a small saucepan over medium heat. As the blueberries heat, they will burst—use a wooden spoon to mash them. Increase heat to medium-high and bring the mixture to a boil, stirring frequently. Let cook for 5 to 8 minutes until thickened. Remove from heat and allow to cool completely.
- Mix Compote with Oats: Stir 1 tablespoon of the cooled blueberry chia compote into the overnight oats mixture in the jar or container. Seal and refrigerate.
- Refrigerate Overnight: Place the jar or container in the refrigerator and let the oats soak for at least 4 hours or ideally overnight, allowing the flavors to meld and oats to soften fully.
- Serve with Toppings: Before eating, top the oats with 1 tablespoon of fresh blueberry chia compote, additional fresh blueberries, and crumbled walnuts or granola for crunch. Optionally, stir in superfood powders like collagen, lucuma, and hemp hearts during the initial mixing step for added nutrition.
Notes
- The blueberry chia compote makes about 1 cup with leftovers perfect for spreading on toast.
- For a quicker version, substitute the compote with organic wild blueberry jam that has no added sugar.
- Optional superfood powders should be added when prepping to soak overnight with the oats, especially chia seeds for optimal texture.
- Use gluten-free oats to keep the recipe gluten-free.
- This no-cook recipe requires refrigeration overnight to soften the oats properly.
