Description

This vibrant Blackstone Pineapple Chicken recipe features juicy boneless chicken thighs stir-fried with a colorful medley of bell peppers, red onion, baby corn, and fresh pineapple chunks. Cooked on a Blackstone griddle, the dish gets beautifully caramelized and is finished with a sweet and tangy sauce, then served in unique pineapple boats for a fun and tropical presentation.

Ingredients

Chicken and Vegetables

  • 1 lb Boneless Chicken Thighs, cubed
  • 1 Red Onion, diced
  • 15 oz Can Baby Corn
  • 1 Orange Pepper, sliced
  • 1 Yellow Pepper, sliced
  • 1 Red Pepper, sliced

Fruit

  • 1 Pineapple

Sauce

  • 19 oz Sweet & Tangy Sauce

Other

  • Nonstick Spray for cooking

Instructions

  1. Prepare the Pineapple Boats: Slice the pineapple in half lengthwise. Carefully carve out the interior of each half to create two hollow pineapple boats, reserving the pineapple flesh for the stir fry.
  2. Cube the Pineapple: Cut the removed pineapple flesh into bite-sized cubes to use later in the stir fry mixture.
  3. Preheat the Blackstone Griddle: Turn the Blackstone to medium heat and allow it to properly warm up for cooking.
  4. Prepare the Cooking Surface: Spray the Blackstone surface evenly with nonstick cooking spray to prevent sticking and promote even caramelization.
  5. Add Ingredients to the Griddle: Place the cubed chicken, sliced peppers, diced red onion, baby corn, pineapple cubes, and the empty pineapple boats directly onto the Blackstone surface.
  6. Cook and Stir: Stir and turn the chicken and veggies frequently as they cook. Continue until the chicken is fully cooked through and the vegetables and pineapple are nicely caramelized and browned.
  7. Add the Sauce: Drizzle the sweet and tangy sauce over the cooking ingredients. Continue stirring and turning to ensure everything is evenly coated and heated through.
  8. Serve: Spoon the cooked chicken and vegetable stir fry into the prepared pineapple boats. Serve immediately and enjoy the tropical flavors presented in a fun, edible container.

Notes

  • You can substitute the sweet & tangy sauce with your favorite stir fry sauce if preferred.
  • Ensure the chicken thighs are cooked to an internal temperature of 165°F (74°C) for food safety.
  • If a Blackstone griddle is not available, a large cast-iron skillet or flat top griddle can be used on stovetop or outdoor grill.
  • Adjust the sweetness by adding a splash of soy sauce or chili flakes to the sauce for a bit of heat.
  • Nonstick spray can be replaced with a small amount of cooking oil if preferred.
