Instructions
- Cook Sweet Potatoes: Heat avocado oil in a large skillet over medium-high heat. Once hot, add the sweet potatoes. Cover and cook for 6-7 minutes, tossing occasionally to prevent burning, until the potatoes are fork tender. Smaller pieces cook faster.
- Add Beans and Salsa: Stir in black beans, salsa, chili powder, cumin, and salt. Continue cooking for 3-5 minutes until beans are warmed through and spices are fragrant.
- Warm Tortilla: In another large skillet over medium heat, warm one tortilla until pliable and heated through.
- Assemble Quesadilla: Place about 1/4 cup of grated cheddar cheese on the tortilla, followed by approximately 1 cup of the black bean and sweet potato mixture. Sprinkle another 1/4 cup cheese on top, then place a second tortilla over the filling to form a sandwich.
- Cook Quesadilla: Cook for about 2 minutes, pressing down gently with the back of a spatula to help seal and melt the cheese. Flip carefully and cook the other side for another 2-3 minutes until golden and cheese is fully melted.
- Serve: Remove from heat and slice into triangles. Repeat with remaining ingredients. Serve warm with optional sour cream, extra salsa, or guacamole.
