Description

This Best Chicken Marsala recipe features tender, thinly pounded chicken breasts pan-fried to golden perfection and smothered in a rich, savory Marsala wine and mushroom sauce. A classic Italian-American dish that’s easy to prepare and perfect for a flavorful weeknight dinner or special occasion.

Ingredients

Chicken

  • 4 chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup (60g) flour
  • 2 tbsp olive oil

Sauce

  • 3 small shallots, chopped
  • 1 cup (100g) chestnut mushrooms, sliced
  • 1 tbsp flour
  • 1/2 cup (125 ml) Marsala wine
  • 1 cup (250 ml) chicken stock
  • Flat leaf parsley, chopped for garnish

Instructions

  1. Prepare the chicken: Cover the chicken breasts with cling wrap and gently pound them with a meat mallet until they are no thicker than 1/2 inch. Season both sides with salt and pepper, then dredge each breast in flour to lightly coat.
  2. Pan-fry the chicken: Heat olive oil in a pan over medium-high heat. Fry the floured chicken breasts for about 5 minutes, turning once, until golden and cooked through. Be careful not to overcook as the thin breasts cook quickly. Remove the chicken and set aside on a plate.
  3. Sauté aromatics and mushrooms: In the same pan, add the chopped shallots and cook on low heat for 2-3 minutes until softened. Add the sliced mushrooms, salt, and pepper, then sauté for 5 minutes until the mushrooms release their moisture and begin to brown.
  4. Make the sauce: Sprinkle 1 tablespoon of flour over the mushrooms and cook, stirring, for one more minute to remove the raw flour taste. Pour in the Marsala wine and increase the heat to medium. Add the chicken stock and bring the mixture to a boil, then reduce to a gentle simmer.
  5. Finish the dish: Return the cooked chicken breasts to the pan, spooning some sauce over them. Let them heat through for a few minutes while the sauce thickens to your desired consistency.
  6. Serve: Garnish with chopped flat leaf parsley and serve with your preferred side dish, such as mashed potatoes or steamed vegetables.

Notes

  • For best results, pound the chicken evenly to ensure quick and uniform cooking.
  • You can substitute chestnut mushrooms with cremini or white button mushrooms if desired.
  • Adjust the sauce thickness by simmering longer if you prefer a thicker sauce.
  • Marsala wine is essential for authentic flavor; avoid non-alcoholic substitutes for best taste.
  • This dish pairs well with pasta, rice, or roasted vegetables.
