Instructions

  2. Cook aromatics: Add minced garlic, oregano, ground cumin, paprika, and optional cayenne to the saucepan. Stir and cook for an additional 1 minute to release the spices’ aromas.
  3. Add tomato paste and liquids: Stir in the tomato paste and cook for another minute, stirring constantly. Then add the vegetable broth, diced tomatoes, and rinsed red lentils, mixing well to combine all ingredients.
  4. Add cabbage: Gradually add the shredded cabbage in batches, pressing each batch down to submerge it fully in the liquid before adding the next batch. This helps the cabbage to wilt evenly.
  5. Simmer: Bring the soup to a boil, then reduce heat to low and cover the saucepan. Let it simmer gently for 20 minutes, stirring occasionally to prevent sticking and to ensure lentils cook through.
