Description

Berrylicious Cheesecake Tacos are a delightful twist on classic cheesecake, featuring crispy graham cracker-coated tortilla shells filled with a smooth, creamy cheesecake mixture and topped with vibrant blueberry and strawberry jams. This no-fuss dessert is perfect for a fun, elegant treat that combines rich flavors with a playful presentation.

Ingredients

Shell Ingredients

  • 5 8-inch Tortillas
  • 1 cup Graham Cracker Crumbs
  • ⅓ cup Unsalted Butter, melted

Cheesecake Filling

  • 9 ounces Cream Cheese, room temperature
  • 1 cup Heavy Cream
  • ⅓ cup Powdered Sugar
  • 1 tsp Lemon Juice
  • 1 tsp Vanilla Extract

Toppings

  • Blueberry Jam
  • Strawberry Jam

Instructions

  1. Prepare the tortilla shells: Preheat your oven to 400℉ (200℃). Stack the tortillas together and use a 1.5-inch circle cookie cutter to cut out 5 circles. To avoid air bubbles during baking, pierce each tortilla circle with a fork on both sides.
  2. Coat and bake the shells: Dip each tortilla circle into melted butter, then coat generously with graham cracker crumbs. Next, flip an empty cupcake pan upside down and place the coated tortillas between the cups, shaping them into taco shells. Bake in the preheated oven for 10-12 minutes, or until they turn slightly brown and crisp. Remove from the oven and allow to cool completely.
  3. Make the cheesecake filling: In a large mixing bowl, combine the room-temperature cream cheese, lemon juice, and vanilla extract. Mix until smooth and creamy. In a separate bowl, whisk the heavy cream with powdered sugar until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined well, ensuring a light, fluffy texture.
  4. Assemble the cheesecake tacos: Transfer the cheesecake filling into a piping bag for easy filling. Pipe the cheesecake mixture into the cooled tortilla shells carefully. Top each filled shell with dollops of blueberry jam and strawberry jam to add sweetness and color.
  5. Serve and enjoy: Serve the Berrylicious Cheesecake Tacos immediately to maintain the crispiness of the shells and enjoy the fresh, creamy, fruity combination.

Notes

  • Using room temperature cream cheese helps achieve a smooth cheesecake filling without lumps.
  • Poking holes in the tortillas prevents bubbling and ensures even baking.
  • Allow the taco shells to cool completely before filling to keep them crisp.
  • You can substitute fruit jams with fresh berries for a fresher topping.
  • For a dairy-free version, substitute heavy cream and cream cheese with vegan alternatives.
