Description

A delicious and fun twist on classic nachos featuring smoky grilled pineapple, tender BBQ chicken, spicy candied jalapeños, and melted Monterey Jack cheese, all layered over crispy tortilla chips and baked to bubbling perfection.

Ingredients

Grilled Pineapple

  • 1/2 pineapple, peeled, cored and sliced
  • Oil for grilling

Main Ingredients

  • 1 (14 ounce) bag tortilla chips
  • 2 cups chicken, cooked and shredded or sliced
  • 1/2 cup BBQ sauce
  • 1/2 cup red onion, sliced or diced
  • 1/2 cup candied jalapeños
  • 2 cups Monterey Jack cheese, shredded

Instructions

  1. Prepare the grill and pineapple: Heat the grill to medium-high heat. Lightly oil the pineapple slices to prevent sticking and grill them until they develop a slight char, about 2 to 3 minutes per side. This enhances the sweetness and adds a smoky flavor.
  2. Assemble the nachos: Spread the tortilla chips evenly over an oven-safe pan or dish. Layer the grilled pineapple slices on top, followed by the cooked chicken mixed with the BBQ sauce. Distribute the red onion slices and candied jalapeños evenly over the top, and finish by sprinkling the shredded Monterey Jack cheese across all ingredients.
  3. Bake to melt cheese: Place the assembled nachos in a preheated oven at 350°F (180°C) and bake for 5 to 10 minutes, or until the cheese has melted thoroughly and is bubbly, ensuring all flavors meld together perfectly.

Notes

  • Use cooked chicken for convenience; rotisserie chicken works well.
  • For extra heat, add fresh jalapeño slices or hot sauce.
  • Serve immediately after baking to enjoy the nachos at their best.
  • Can be customized using different types of cheese like cheddar or pepper jack.
  • Ensure the baking dish is oven safe to avoid damage and safety hazards.
