Ingredients
Wet Ingredients
- 2/3 cup mashed banana
- 3 tbsp pure maple syrup or honey
- 2 tbsp oil or water
- 1/2 tsp pure vanilla extract (optional)
Dry Ingredients
- 1 cup flour (white, spelt, oat, or gluten-free all-purpose flour recommended)
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a donut pan or mini muffin tin thoroughly to ensure the donuts release easily after baking.
- Mix Wet Ingredients: In a large bowl, whisk together the mashed banana, maple syrup (or honey), oil (or water), and vanilla extract if using until smooth and combined.
- Combine Dry Ingredients: In a separate bowl, mix the flour, baking powder, and salt to ensure even distribution of leavening and seasoning.
- Form Batter: Gradually stir the dry ingredients into the wet mixture. Mix until just combined to form a smooth donut batter; avoid overmixing to keep the donuts tender.
- Fill Pan and Bake: Spoon or pipe the batter evenly into the prepared donut pan or mini muffin tin, filling each cavity nearly full. Bake in the preheated oven for about 8 minutes, or until the donuts have risen and a toothpick inserted into the center comes out mostly clean.
- Cool and Remove: Allow the donuts to cool in the pan for several minutes before carefully popping them out to cool completely on a wire rack.
- Optional Icing: Once cooled, top them with your choice of icing such as a cinnamon cream cheese frosting to enhance flavor.
Notes
- This recipe works well with white, spelt, oat, or Bob’s gluten-free all-purpose flour. Almond flour and whole wheat flour have not been tested and may affect texture and rise.
- Use oil or water depending on dietary preferences or for lower fat content.
- Maple syrup or honey can be substituted depending on sweetness preference.
- Donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
- For a dairy-free frosting option, use plant-based cream cheese and non-dairy milk.
