Ingredients

Chicken and Marinara

  • 2 pounds boneless chicken breasts
  • 2 cups marinara sauce (spicy Arrabiata preferred)

Cheese Mixture

  • 16 ounces whole milk ricotta cheese (about 2 cups)
  • 1 cup mozzarella cheese, shredded (divided use)
  • ½ cup parmesan cheese, grated (divided use)

Vegetables and Seasonings

  • 1 cup spinach, chopped
  • 4 garlic cloves, minced (divided use)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat oven: Preheat your oven to 400°F (204°C) to ensure it is ready for baking the chicken.
  2. Prepare cheese mixture: In a medium bowl, combine the shredded mozzarella and grated parmesan cheeses. In another bowl, mix together the ricotta cheese, half of the cheese mixture, chopped spinach, half of the minced garlic, and Italian seasoning until fully combined.
  3. Prepare baking dish and chicken: Lightly oil a 13×9-inch baking dish with olive oil or spray it with non-stick cooking spray. Place the chicken breasts in a single layer in the dish. Season the chicken evenly with salt, pepper, and the remaining minced garlic.
  4. Assemble the dish: Evenly spread the ricotta and spinach cheese mixture over the top of the chicken breasts. Then cover completely with the marinara sauce, distributing it evenly over the chicken and cheese layer.
