  • 2 tsp dried basil
  • 2 tsp dried parsley
  • 1 tsp olive oil
  • 1/4 tsp fine sea salt (plus additional to taste)
  • 1/4 tsp black pepper

Cheese (Optional)

  • 1/4 cup Parmesan, freshly grated


Instructions

  1. Preheat Oven: Set your oven to 400 °F (200 °C) to preheat, ensuring it’s hot enough to bake the vegetables perfectly.
  2. Prepare Vegetables: In a 7×11 inch or similar baking dish, combine the sliced zucchini quarters, cherry tomatoes, minced garlic, dried basil, dried parsley, olive oil, sea salt, and black pepper. Toss everything gently to mix the flavors evenly.
  3. Initial Bake: Place the baking dish in the preheated oven and bake for 20 minutes, allowing the vegetables to soften and the flavors to meld.
