Description

Apple Samoas are a fresh and healthier twist on the classic Samoa cookie, featuring crisp apple slices topped with a coconut and almond butter mixture, drizzled with chocolate for a delightful and guilt-free treat.

Ingredients

Apple Base

  • 1 apple, Honeycrisp preferred or Pink Lady, sliced into ¼-inch thick rounds, cored (about 3-4 slices)

Toppings

  • ⅓ cup unsweetened shredded coconut
  • 3 tablespoons almond butter or cashew butter (or seed butter of choice)
  • ½ tablespoon maple syrup
  • 2 tablespoons chocolate chips
  • ½ teaspoon coconut oil

Instructions

  1. Prepare Apple Slices: Cut the apple into ¼-inch thick slices and remove the core. Aim to get about 3 to 4 even slices to serve as the base for your topping.
  2. Mix Coconut Topping: In a bowl, thoroughly combine the unsweetened shredded coconut, almond butter, and maple syrup until you achieve a smooth and cohesive mixture that can easily spread on the apple slices.
  3. Assemble the Snacks: Spread the coconut and almond butter mixture evenly on top of each apple slice. Arrange the topped slices on a sheet of parchment paper to prepare for the chocolate drizzle.
  4. Melt Chocolate: In a small heatproof bowl, melt the chocolate chips together with the coconut oil until smooth and glossy. This can be done over a double boiler or carefully in short bursts in the microwave, stirring frequently to avoid burning.
  5. Drizzle Chocolate: Using a spoon or fork, drizzle the melted chocolate over each apple slice generously, creating a decorative effect that covers the topping partially or fully as you prefer.
  6. Freeze to Set: Place the assembled apple slices on the parchment paper in the freezer and chill until the chocolate is firm, approximately 5 to 10 minutes. Once set, they are ready to enjoy.

Notes

  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 2-3 days. Note that apples may lose some crunch but will remain tasty.
  • Freezing: For longer storage, freeze the assembled apple slices on a baking sheet until solid, then transfer to a freezer-safe bag. They can be kept for up to 1 month and should be thawed for a few minutes before eating.
