Description

A refreshing and wholesome Apple Cranberry Salad featuring crisp romaine lettuce, diced apple, sharp cheddar cheese, deli turkey, dried cranberries, and crunchy walnuts, all tossed in a tangy homemade apple cider vinaigrette. Perfect for a light lunch or a nutritious side dish.

Ingredients

Salad Ingredients

  • 3 hearts of romaine lettuce, chopped
  • 1 large apple, diced
  • 1/2 cup cubed sharp cheddar cheese
  • 1 cup diced deli turkey (about 4-5 slices or leftover turkey chopped)
  • 1/3 cup organic dried cranberries
  • 1/3 cup walnuts

Apple Cider Vinaigrette

  • 2 tablespoons olive oil
  • 2 tablespoons apple cider
  • 2 tablespoons apple cider vinegar
  • dash of salt

Instructions

  1. Prepare the vinaigrette: In a small bowl or jar, combine 2 tablespoons of olive oil, 2 tablespoons of apple cider, 2 tablespoons of apple cider vinegar, and a dash of salt. Whisk the ingredients together until well emulsified or cover the jar and shake vigorously to mix.
  2. Assemble the salad: In a large bowl, add the chopped romaine lettuce, diced apple, cubed sharp cheddar cheese, diced deli turkey, dried cranberries, and walnuts. Pour the prepared apple cider vinaigrette over the salad ingredients.
  3. Toss and serve: Gently toss all the salad ingredients with the vinaigrette until everything is evenly coated. Serve immediately to enjoy the fresh, crisp textures and vibrant flavors.

Notes

  • Use either 4-5 slices of deli turkey chopped or leftover cooked turkey chopped into pieces.
  • To add extra crunch, lightly toast the walnuts before adding.
  • For a vegetarian option, omit the turkey and add extra cheese or nuts for protein.
  • The salad is best enjoyed fresh but can be stored covered in the refrigerator for up to a day before dressing.
