Ingredients
Pie Crust
- 1 pie crust 9-inch, baked and cooled (store-bought or homemade)
Peanut Butter Crumbles
- ½ cup powdered sugar
- ¼ cup peanut butter
Peanut Butter Filling
- 1 (3.4 ounce) box instant Jell-O vanilla pudding mix
- 1½ cups milk
- ½ cup peanut butter
- 1 cup whipped topping or 1 cup Cool Whip (already whipped)
Whipped Topping
- 2 cups whipped topping or 1 (8 oz) container Cool Whip for topping
- Alternatively, 1 cup whipping cream plus 3 tablespoons powdered sugar (whipped to make 2 cups whipped cream)
Instructions
- Make the Peanut Butter Crumbles: In a medium bowl, use an electric mixer to combine the powdered sugar and peanut butter on medium speed until small peanut butter crumbles form. If the mixture feels too powdery, add a few drops of water until larger nuggets start to form. Reserve half of the crumbles.
- Prepare the Pie Crust Base: Add half of the peanut butter crumbles to the bottom of the baked and cooled 9-inch pie crust, spreading evenly to create a crunchy base layer.
- Make the Peanut Butter Filling: In a separate bowl, mix the instant vanilla pudding mix, milk, and peanut butter using a mixer for 2 minutes until smooth and well combined. Gently fold in the whipped topping (Cool Whip or whipped cream), making sure it is already whipped, mixing lightly to keep the filling airy.
- Assemble the Pie: Pour the peanut butter pudding filling over the peanut butter crumb base in the pie crust, smoothing the top as needed.
- Add Whipped Topping and Crumbles: Spread the whipped topping evenly over the peanut butter filling. Sprinkle the remaining half of the peanut butter crumbles over the whipped topping for garnish.
- Chill to Set: Refrigerate the pie for at least 1 to 2 hours to allow it to firm up before slicing and serving.
Notes
- For an indulgent frozen treat, freeze the pie after assembling. Slice directly from the freezer when ready to enjoy and let the slices sit for 5 minutes before serving.
- To intensify the peanut butter flavor, add an extra couple of tablespoons of peanut butter to the filling mixture.
- For a creamier filling, increase the whipped topping by ½ cup when mixing into the peanut butter pudding layer.
- The pie can be made with store-bought or homemade crust depending on preference.
