Description

A flavorful and healthy Air Fryer Chicken and Broccoli recipe featuring tender chicken pieces marinated in a ginger-soy blend and cooked with fresh broccoli and onions in an air fryer for a quick and easy meal.

Ingredients

Chicken and Vegetables

  • 1 pound boneless, skinless chicken breast or chicken thighs, cut into 1-inch pieces
  • 1/2 pound broccoli, cut into florets
  • 1/2 medium onion, thickly sliced

Marinade

  • 3 tablespoons olive oil
  • 1 tablespoon fresh minced ginger
  • 3 cloves garlic, minced
  • 2 tablespoons low sodium soy sauce (or Tamari for Gluten Free)
  • 1 tablespoon rice vinegar (or distilled white vinegar for Gluten Free)
  • 1 teaspoon sesame oil
  • 1 teaspoon smoked paprika
  • 2 teaspoons honey
  • 1 teaspoon hoisin sauce
  • Salt, to taste
  • Ground black pepper, to taste

Instructions

  1. Prepare Marinade: In a bowl, combine olive oil, minced ginger, garlic, soy sauce, rice vinegar, sesame oil, smoked paprika, honey, hoisin sauce, salt, and black pepper. Stir well to create a uniform marinade.
  2. Marinate Ingredients: Place the chicken pieces in one bowl and the broccoli and sliced onions in another. Divide the marinade between the two bowls, stirring each to coat the chicken and vegetables evenly. Let marinate for at least 10 minutes, or up to 30 minutes for enhanced flavor.
  3. Preheat Air Fryer: Set your air fryer to 380°F (193°C) and allow it to preheat fully before cooking.
  4. Cook Chicken: Add only the marinated chicken pieces to the air fryer basket, arranging them in a single layer to ensure even cooking. Cook for 10 minutes, monitoring the chicken to avoid drying out; check internal temperature around 160°F (71°C).
  5. Add Vegetables: Stir the broccoli florets and sliced onions into the chicken in the air fryer basket. Continue air frying for an additional 8 to 11 minutes, stirring halfway through to promote even cooking, until the chicken is fully cooked and vegetables are tender but still crisp.
  6. Serve: Remove from air fryer and serve immediately alongside white or brown rice, or your preferred side dish.

Notes

  • Cut chicken into even 1-inch pieces to ensure uniform cooking and prevent dryness.
  • Marinate the chicken and vegetables for at least 10 minutes, up to 30 minutes for deeper flavor infusion.
  • Arrange chicken in a single layer in the air fryer to achieve crispy edges and even cooking.
  • Give broccoli enough space in the basket to keep it tender with a slight bite instead of becoming chewy.
  • Monitor the internal temperature of the chicken closely; pulling it out around 160°F allows carryover cooking to finish without drying the meat.
  • Cut the chicken and broccoli into similar sizes to ensure they cook evenly.
