Description
This 3-Ingredient Vegan Banana Pudding is a simple, healthy, and dairy-free dessert made without added sugar. Combining soy milk, cornstarch, and ripe bananas, this pudding is vegan, creamy, and naturally sweetened with optional stevia or maple syrup. It’s easy to prepare on the stovetop, and you can enhance its flavor and color with turmeric, dairy-free butter, or peanut butter. Perfect for single servings or larger batches, this pudding can be served alone or layered with whipped coconut cream and almond flour shortbread cookies for an indulgent treat.
Ingredients
Main Ingredients
- 1 ¼ cup Soy Milk (or non-dairy milk of your choice)
- 3 tablespoons Cornstarch (or corn flour)
- ½ cup Mashed Banana
Optional Ingredients
- ½ – 1 teaspoon Banana Stevia Drops (adjust to taste)
- ¼ – ½ teaspoon Turmeric (for color enhancement)
- 1 tablespoon Dairy-Free Unsalted Butter (or natural peanut butter)
Instructions
- Prepare Cornstarch Slurry: In a small mixing bowl, whisk together 1/4 cup of soy milk and the cornstarch until you form a smooth, lump-free slurry. Set this mixture aside to incorporate later.
- Heat Remaining Milk: Pour the remaining 1 cup of soy milk into a small saucepan and warm it over medium-high heat. Heat until the milk begins to simmer with bubbles appearing on the sides of the pan.
- Cook Pudding Base: Slowly stir in the cornstarch slurry into the simmering milk, then reduce the heat to medium. Continue to stir gently but consistently with a spoon as the mixture cooks and thickens, which will take approximately 5-8 minutes.
- Add Flavorings and Banana: Remove the thickened mixture from the heat and transfer it to a glass bowl. Stir in the mashed banana along with optional banana stevia drops (or alternatively 2-3 tablespoons of maple syrup and ½ teaspoon natural banana extract). For enhanced color and creaminess, optionally add turmeric and a tablespoon of dairy-free butter or peanut butter.
- Steam Pudding: Set the pudding aside uncovered for 20 minutes to allow it to steam out and thicken further.
- Seal and Chill: Cover the surface of the pudding directly with plastic wrap without pressing it down, preventing a skin from forming. Refrigerate for at least 1 hour or preferably overnight to fully set and chill.
- Serve: Enjoy single servings as is, or layer with whipped coconut cream, banana slices or mash, and crumbled almond flour shortbread cookies for a delightful dessert. For larger batches, multiply the recipe to fill an 8×8 inch dish.
Notes
- You can replace banana stevia drops with 2-3 tablespoons of maple syrup and ½ teaspoon of natural banana extract to adjust sweetness naturally.
- Add turmeric sparingly to enhance the yellow color without overwhelming the flavor.
- Use dairy-free butter or peanut butter to enrich texture and creaminess if desired.
- Always press plastic wrap gently to touch the pudding to avoid skin formation when refrigerated.
- This pudding is versatile and can be scaled up for larger gatherings or adjusted to personal taste preferences.
