Perfect for a quick, savory snack or light meal, it combines fresh vegetables with gooey cheese in a satisfying handheld form.
Ingredients
Zucchini Patties
- 2 cups grated zucchini
- 1 large egg
- ½ cup freshly grated Parmesan
- ¼ cup cornstarch
- Salt and pepper, to taste
For Cooking
- 2 tablespoons fresh churned garlic butter
- 1–2 cups shredded Cheddar cheese
Instructions
- Drain Zucchini: Squeeze moisture out of the grated zucchini using a cheesecloth or kitchen towel to ensure the patties hold together well during cooking.
- Mix Ingredients: Place the dried zucchini in a mixing bowl and add the egg, Parmesan, cornstarch, salt, and pepper. Mix thoroughly with a fork until a dough-like consistency forms.
- Heat Skillet: Warm the garlic butter in a skillet over medium heat to prepare for cooking the zucchini patties.
- Form Patties: Scoop half of the zucchini mixture onto one side of the skillet and shape it into a flat patty. Repeat this step with the remaining mixture to form the second patty.
- Cook Patties: Cook each patty for 3–4 minutes on each side or until they become golden brown and crisp, flipping carefully to prevent breaking.
- Assemble Sandwich: Top one patty with the shredded cheddar cheese, then carefully place the second patty on top to create a sandwich.
- Melt Cheese: Continue cooking the assembled sandwich in the skillet for another 3 minutes, allowing the cheese to fully melt and bind the patties together.
- Serve: Remove the sandwich from the pan, let it cool for about 60 seconds to set, slice, and serve warm.
Notes
- For extra flavor, mix in fresh herbs like basil or oregano into the zucchini mixture before cooking.
- Try different cheeses like mozzarella or Havarti to vary the flavor profile of the sandwich.
- Best served fresh; however, you can prepare the patties ahead of time and store them refrigerated before cooking.
