Ingredients

Zucchini Mixture

  • 2 cups zucchini; grated – about 2 zucchini

Cheese

  • 1 cup cheddar cheese; shredded
  • 1/2 cup grated parmesan cheese

Dry Ingredients & Seasonings

  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/4 tsp baking powder
  • 11 1/4 cup all-purpose or whole wheat flour

Wet Ingredients

  • 2 eggs


Instructions

  1. Prepare Zucchini: Grate the zucchinis and place the shreds into a kitchen towel or sturdy paper towels. Ring out as much water as possible over a colander to avoid mess.
  2. Mix Ingredients: Preheat your waffle iron. In a large bowl, combine the grated zucchini, cheddar cheese, parmesan cheese, garlic powder, salt, black pepper, onion powder, baking powder, eggs, and flour. Adjust with up to 1/4 cup more flour if the mixture is too watery. Let the batter rest for 10 minutes to become fluffy and set.
  3. Cook Waffles: Spray the preheated waffle iron generously with nonstick cooking spray. Pour about 1/4 cup of batter per waffle into the iron (size may vary depending on your waffle maker). Cook per your machine’s instructions—usually 2 to 4 minutes—until the waffles are golden brown. Repeat the process, spraying the iron between batches until all batter is used.

Notes

  • For a gluten-free version, substitute all-purpose or whole wheat flour with almond flour.
  • Store leftover waffles in an airtight container or a large ziplock bag in the refrigerator for 5-7 days.
