Description

Walking Taco Bake is a fun, flavorful, and easy casserole dish that combines all the best elements of a classic walking taco into a warm, satisfying meal. With layers of seasoned ground beef, crunchy tortilla chips, zesty taco toppings, and melted cheese, this dish is sure to be a crowd-pleaser.


Ingredients

1 lb ground beef (or ground turkey/chicken for a leaner option)

1 packet taco seasoning (or homemade taco seasoning)

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies (optional for extra spice)

1 cup sour cream

1 cup shredded cheddar cheese (or a blend of cheddar and Monterey Jack)

1 bag (10-12 oz) tortilla chips

1 cup lettuce, shredded (for topping)

1/2 cup diced tomatoes (for topping)

1/4 cup sliced green onions (for topping)

Jalapeños (optional, for added heat)

Fresh cilantro (optional, for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or oil.
  2. In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
  3. Add the taco seasoning to the cooked beef along with 1/4 cup of water (or as directed on the seasoning packet). Stir and cook for 2-3 minutes until the seasoning is well incorporated.
  4. Stir in the black beans and diced tomatoes with green chilies (if using). Cook for another 2-3 minutes until heated through.
  5. Layer the bottom of the prepared baking dish with a layer of tortilla chips. Spoon the beef and bean mixture evenly over the chips. Top with a generous amount of shredded cheese.
  6. Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and top with shredded lettuce, diced tomatoes, green onions, jalapeños, and fresh cilantro. Serve hot and enjoy!

Notes

For a leaner option, swap the ground beef for ground turkey or chicken.

You can use other beans like pinto or kidney beans for variety.

For a spicier version, add jalapeños or a can of diced green chilies to the beef mixture.

Vegetarians can skip the meat and add extra beans and veggies like corn and bell peppers.

This dish can be made ahead by preparing the beef and bean mixture and assembling the dish the night before.
