Instructions
- Prepare Ice Bath: Fill a bowl with cold water and enough ice cubes to create an icy bath. Set aside to cool the eggs quickly after boiling.
- Boil Eggs: In a medium saucepan, bring enough water to fully cover the eggs to a rolling boil. Carefully add 6 eggs to the boiling water. Boil for 7 minutes for runny yolks or 7½ minutes for more set yolks.
- Cool Eggs: Remove eggs from boiling water and immediately place them in the prepared ice bath. Leave submerged for at least 2 minutes or until cool enough to handle.
- Peel Eggs: Under slow running water, peel the eggs carefully to remove the shells. Place peeled eggs on paper towels to absorb any excess water and set aside.
- Make Sauce – Melt Butter & Garlic: Heat a large skillet over low flame and add 1½ tablespoons unsalted butter. Melt the butter gently without clarifying it. Add ¼ cup minced garlic and stir for 1 minute on low heat to infuse flavor.
- Add Seasonings: Add 2¼ teaspoons Old Bay seasoning, 3 teaspoons light brown sugar, ½ heaping teaspoon onion powder, 1½ teaspoons lemon pepper seasoning, 1 teaspoon paprika, and ½–1 teaspoon red chili flakes. Stir well and cook for 1 minute to release the spices’ aromas.
- Add Broth and Simmer: Pour in ¾ cup low sodium chicken bone or vegetable broth and increase heat to medium-high. Allow the mixture to cook for about 6 minutes, letting the sauce reduce and slightly thicken.
- Finish Sauce: Stir in juice of ¼ lemon and add a splash of water. Taste the sauce and season with kosher salt if necessary, keeping in mind that Old Bay and lemon pepper already contain salt.
- Assemble and Serve: Place the peeled boiled eggs in a serving bowl and pour the warm buttery sauce over them. Garnish with chopped flat leaf parsley. Serve the eggs as is or alongside crusty ciabatta bread or jasmine rice for a complete meal.

- Boil eggs for exactly 7 minutes for runny yolks or 7½ minutes for more set yolks to suit your preference.
